Dinner Tonight: Easy Pickles

Two cucumbers walked into a bar, and one said, "Let's get pickled." Sorry about that. Anyway, Richard White sent in this timely recipe for pickles that his sister sent to him from Jamestown, N.Y. They're easy to make and, he said, they "really are so yummy."

3 cucumbers, thinly sliced

1 large onion, thinly sliced

1/2 cup cider vinegar

1 cup sugar

1/2 teaspoon mustard seed

1 teaspoon salt

1/4 teaspoon celery seed

1/4 teaspoon turmeric

Mix together all ingredients. Microwave 7-8 minutes, stirring every 2 minutes.

Pour into sterilized jars and top with lids while still hot. Turn jars upside down until cool. Chill in refrigerator until serving.
